Sweet Potato and Avocado Sandwich

This is maybe the yummiest sandwich in history.

1. Season slices of sweet potato with salt, pepper and cumin and roast them in the oven.
2. Slice a ripe avocado.
3. Toast 2 slices of grainy bread from a hoity-toity bakery.
4. Assemble sweet potato and avocado on one side of the toast.
5. Add spring mix.
6. Add mayo to the other side of the toast and place it on top of your tower of ingredients.
7. Eat.

And that is how you make a yummy sandwich.

Seriously? It must have been hiding away in my subconscious somewhere...

Well, I don't claim to have invented the sweet potato and avocado sandwich, but if you want to take credit for it, that's fine.

So are you charging me for copyright infringement now? Ken invented the sweet potato and avocado sandwich and has the documentation to back it up? Hmm???

My documentation is all the freaking awesome avocado sandwiches I've made for years. For infringing on my recipe you owe me one sandwich. I expect to find it in the mail by later this week.
